Mango Chicken Curry

Mango Chicken Curry Ingredients: 2 onions 1 tsp olive or coconut 3 tbsp tomato paste 1 tsp garam masala 1 tsp turmeric 1 tsp mild chilli powder 4 cloves garlic 1/2 cup plain Greek yogurt (Total) 1/4 cup cashew nuts (unsalted) 1 ripe mango 4 - 6 chicken breasts Hot water or chicken stock, as required Method: 1) Chop 2 onions and place in a pan with oil, garam masala, turmeric, tomato purée, garlic, and chilli for a few minutes. 2) Add the chicken to the dish with a bit of water (or stock) and simmer for about 15 minutes until cooked. 3) Dice the mango & gently stir in with the chicken. Serve with 1/2 cup of rice & plain Greek yoghurt. Per serving (serves 4-6): Protein: 34g Fat: 4.5g Carbs: 12g Calories: 236 kcal
